[NFC] Fix Lit test 'amdgpu-openmp-sanitize-options.c'. (#125857) Using 'compiler-rt' in 'LLVM_ENABLE_PROJECTS' causes the clang runtime libraries to be build and installed with arch suffix names i.e ```'*-<arch>.a'``` and ```'*-<arch>.so'```.
