Clean up lazy_bench so it runs working models only by default (#69749)
- the set of 'working models' is determined by CI, not local dev
machine, so you may still have to tweak the exclude list locally
(e.g. if you GPU has too little memory for some models, or you didn't
properly install all the deps)
